WHAT TYPE OF GROUND BEEF TO USE FOR BURGERS:

The most widely used type of ground beef for burgers is ground chuck. The more fat gives the burger a terrific flavor and keeps it moist without making it too pricey.

To produce a fantastic, moist grilled burger, ground beef should aim for a fat level of 15-20%. Various ground types of meat, such as beef and chorizo, beef and ground pork, or other types of ground beef, can be combined to create new flavors. Just keep the fat content between 15% and 20%!

  • This is not the time to trim the fat

In light of today's concern over obesity, I'm here to advise against cooking burgers to reduce fat. 85% lean grass-fed ground beef is what I usually use. Additionally, I use "double ground" beef, which guarantees a better homogeneous mixing of the fat with the meat.

  • Make and chill patties

Avoid handling them too much, which could compress the meat and cause the fat to melt. On a warm day, you may even run your hands under cold water before forming the patties.

  • Press your thumb

  • Olive oil for the win!

  • NEVER press down while grilling a burger!

There are many general guidelines for determining whether a burger is done. Using an instant-read meat thermometer to check that the interior temperature has reached 160 degrees is the safest method. The meat will also continue to cook a little after it has been taken off the grill.

  • Burgers should rest before being served. 

After the burgers have finished cooking, set them aside on a tray to "rest" for about 5 minutes before serving so that the burger will stay juicy and whole.

Burgers should typically be cooked on Medium-High to High (around 375 degrees) (400 degrees). Although you can purchase a grill thermometer for charcoal grills as well, most gas grills feature an inbuilt thermometer to keep an eye on the temperature.

WITH OR WITHOUT A LID ON THE GRILL?

The cover is typically left off when cooking quickly. Since I live in a windy region, I nearly always barbecue with the lid on or down (it helps with flare-ups too). Burgers can be cooked with or without a lid as long as you use an Instant Read Thermometer to check for flare-ups and doneness.
